The name Hemlock carries a multifaceted meaning. First, the Hemlock tree (Tsuga), native to Northern Idaho, is a symbol of strength, resilience, and the natural beauty of our region. Native Americans also utilized the Hemlock tree for various purposes, including a food source during famine, medicinal remedies and even using the bark to create dyes; essentially, they considered it a valuable plant with multiple practical uses. Our use of the name “Hemlock” is a tribute to the land that inspires us and the deep-rooted traditions we honor.
Second, while Hemlock is sometimes associated with the story of Socrates and the hemlock potion he drank, there’s a deeper meaning behind his choice. Socrates accepted the poison as an act of integrity, courage, and adherence to his principles. Rather than fleeing his unjust sentence, he used his final moments to reaffirm his belief in wisdom, justice, and the pursuit of truth — values that resonate deeply with us.
At Hemlock, we aim to embody that same spirit by redefining the traditional steakhouse. We combine timeless traditions with bold, modern innovations to create an experience that encourages reflection, meaningful conversations, and discovery. To honor Socrates’ legacy, we’re even crafting a line of Socrates-inspired cocktails to spark curiosity and connection.

Q: Why doesn’t Hemlock use seed oils?
A: At Hemlock, we believe indulgence should never compromise your health—or your taste buds. That’s why our kitchen is 100% seed oil free. No canola, no soybean, no sunflower. Instead, we use thoughtfully sourced fats like beef tallow for frying, 100% olive oil for dressings, and avocado oil for grilling. These nutrient-dense, chef-approved options not only support your health but also elevate the natural flavors of our ingredients. After all, your Prime Boise steak deserves better than industrial byproducts.
