Hemlock Introduces A Bold New Chapter in Steakhouse Culture in Downtown Boise
Opening Spring 2025, Hemlock promises inventive cuisine, a dynamic ambiance, and a fresh perspective on steakhouse traditions
BOISE, Idaho, Nov. 2024 – Boise's culinary scene is about to welcome an exciting new chapter with the arrival of Hemlock, a boutique neighborhood steakhouse set to open in Spring 2025. This highly anticipated venture is led by Scott Slater and Boise native Todd Ketlinski, the creative forces behind the celebrated Spitfire Tacos + Tequila in Eagle, Idaho. With their proven expertise and innovative vision, Hemlock is poised to redefine the steakhouse experience with an unapologetically bold approach, offering a fresh take on this timeless fine-dining tradition.
Located in the heart of Downtown Boise at the Inn at 500 Capitol, Hemlock will bring a fresh and dynamic dining experience to the city. Guests can expect an exciting menu featuring premium cuts of steak, a lively bar with an elevated mixology program, and playful touches like table-side baked potato service. The venue’s vibrant atmosphere will also include striking interior design, a grand piano playing ’90s hip-hop and top 40 hits, and special offerings like “Brunch with Beats,” debuting in Summer 2025.
Hemlock is poised to take over the restaurant space currently held by Richard's Restaurant & Bar. Chef Richard Langston and his wife Melinda, well-known figures in Boise's food scene, are planning to retire after nearly three decades as restaurateurs in the Treasure Valley.
“As a Boise native, I’ve watched this city grow into a vibrant culinary hub, and it’s an honor to contribute to that evolution with Hemlock. This isn’t just about opening a new restaurant—it’s about reimagining what a steakhouse can be while continuing the legacy of this iconic space,” said Todd Ketlinski, Co-Founder of Hemlock. “With bold innovation, creative cuisine, and a deep respect for Boise’s dining traditions, Hemlock will offer an experience that celebrates both the past and the future of our city’s food scene.”
Hemlock will also take the helm as exclusive caterer for all catering and banquet services at the Inn at 500 Capitol, raising the bar on its already thriving program with elevated culinary offerings and exceptional hospitality. Hemlock will continue to service private gatherings including anniversaries, weddings, and corporate events, while also meeting the needs of new and existing corporate clients, local small businesses, and groups seeking unforgettable experiences.
As part of its ongoing commitment to providing a top-tier experience, room service will continue to be provided to hotel guests during the transition, ensuring a seamless dining experience even while the restaurant undergoes its transformation. Guests who book a stay at the Inn in 2025 can enjoy a special package that includes a $100 dining credit to be used at Hemlock.
As Boise solidifies its reputation as the Pacific Northwest’s coolest secret, the city’s culinary scene is set to reach new heights with Hemlock. Recognizing the significant impact Chef Richard has made in the Boise dining community, Hemlock will retain him to serve as the opening chef. He will design the inaugural menu, infusing his signature creativity with Hemlock’s innovative vision.
"We are honored to continue the legacy that Richard and Melinda Langston have established," said Scott Slater, Co-Founder of Hemlock. "Our goal with Hemlock is to offer Boise a dining experience that marries the rich traditions of the Boise dining scene while pushing the limits of what a steakhouse can be."
